Zucchini is an edible summer squash that is usually dark green in color. It is related to the cucumber and melon and is part of the Cucurbitaceae family. Zucchini is a versatile vegetable that can be eaten raw, steamed, grilled, roasted, stir–fried, boiled, or used in baking. It is an excellent source of dietary fiber and vitamins A and C, and also contains potassium and magnesium. Zucchini has a mild flavor that makes it a great addition to salads, stir–fries, soups, pastas, and other dishes.
